Oyster Pepper

This exquisite Oyster Pepper Blend is a carefully crafted seasoning designed to elevate the flavors of oysters and seafood, bringing out the fresh iodine notes of the ocean. Made from a unique blend of six crushed peppers, it was awarded the Epicure d’Or prize at the 2022 Épicure de L'épicerie Fine Gourmet Food Fair in the cooking aid category. Each ingredient has been sourced from some of the world’s finest spice regions, delivering a balance of intensity, fruitiness, and freshness.

Ideal Pairings

  • Oysters: This blend perfectly complements oysters, enhancing their natural briny and iodine-rich flavors.
  • Meats & Cheese: Surprising on a fruit salad or goat cheese toast, it also works wonderfully on grilled meats and seafood, adding depth and a hint of spice.
  • Seafood: Particularly suited for all types of seafood, its citrusy and peppery notes enliven shrimp, clams, or fish dishes.

Flavor Profile This blend offers a honeyed and fruity flavor from cubeb pepper, with a lemony and fresh touch from the Timur berry, complemented by the aromatic warmth of Voatsiperifery black pepper, Penja white pepper, and Jamaican pepper. Together, these elements create an intense, aromatic seasoning that reveals and balances the iodine-rich flavors of oysters and other seafood.

6 Crushed Peppers

  • Voatsiperifery Black Pepper: Sourced from Madagascar’s tropical forests, this wild pepper delivers a fruity and earthy flavor.
  • Cubeb Pepper: Known for its sweet and spicy notes, cubeb pepper is harvested from Indonesia and provides the fruity undertone in the blend.
  • Penja White Pepper: From Cameroon’s volcanic soils, this pepper adds a smooth, creamy spice.
  • Timur Berry: Native to Nepal, this berry brings a bright, citrusy kick that elevates seafood dishes.
  • Jamaican Pepper: Also known as allspice, this pepper has warm notes of cloves, nutmeg, and cinnamon, enhancing the depth of the blend.

Culinary Tip For oysters, sprinkle a pinch of oyster pepper on each oyster just after opening. For the best experience, serve oysters on seaweed or coarse salt rather than ice to preserve their flavor and ease digestion.
